work has been really busy lately – busy is good, of course, but it definitely tires you out and leaves little motivation to do much else. I’ve basically just been coming home from work, trying to make it to the gym, cooking dinner, cleaning up, and decompressing over some TV.
what I cooked this week:
- monday: a giant kale & spinach salad tossed in a homemade sherry shallot honey dijon vinaigrette, with shaved carrots, roasted brussel sprouts, ribboned cucumber, beans, raisins, slivered almonds, and a side of roasted sweet potatoes.
- tuesday: couscous with lemon shrimp, roasted asparagus and slivered almonds.
- wednesday: lemon & thyme roasted filet of sole over a bed of cauliflower rice with a side of steamed broccoli.
I’m working on a cookbook (I don’t know if I told y’all), so I really need to be better about devoting my evening hours to writing 1-2 recipes or even just doing some research. I need to hit up Barnes & Noble – maybe tomorrow evening… I WAS going to see The Great Gatsby, but I feel like it’s going to be so crowded, the movie won’t be enjoyable.
