last night i forgoed the gym – yet again. to be honest, i was hungover and knew that my run wouldn’t last more than 20 minutes, so i’d rather just relax and really put my best foot forward today and this weekend. SO, i grocery shopped for a recipe i mainly created in my head… for my roommate and Lu.
sesame crusted seared ahi tuna with sesame ginger dressing and peanut noodles
let me warn you… i make THE BEST salads. and by that i mean.. they are no ordinary salads, they are giant meals most people can’t finish. one of my biggest pet peeves is when i tell people “oh i made salad for dinner” and they go “ugh, salad never fills me up” or like “oh, you’re soo good you had a salad.”

a bed of lettuce (mixed romaine with baby spinach) in a homemade sesame ginger dressing filled with
toasted almonds,
chopped carrots,
avocado,
shredded red cabbage,
edamame beans,
sauteed green beans
topped with sesame-seed crusted fresh ahi tuna and sesame noodles in a homemade peanut sesame sauce.
afterwards, watched the VMAs with Lu and Keleigh … then watched Obama’s speech at the DNC. wonderful little night for 3…. and some happy bellies 🙂
